A pot of Gumbo is "family". No other dish is deeply rooted in bringing a gathering together than a pot of Gumbo. My Gumbo is "grandma's" - her blend of Trinity, Roux, Okra, and Gumbo File'. Grandma was from Opelousas, Louisiana, moved to Beaumont Texas, then migrated to San Francisco, California.
Then there's Gumbo Z'herbes - the Queen of Gumbos. On my first trip to New Orleans I found this cookbook in the French Quarter - "Mandy's Favorite Louisiana Recipes" - copyright 1929. I was intrigued by a Gumbo made of different types of "Greens". This Gumbo is my gift to Vegetarians.
